Using leftover rice from curry night, I made a korean-style fried rice with lite spam (yes, they make a "light" spam these days), kimchee, corn, scrambled eggs and some green onions for Mr. Moc. Since I'm trying to lose some weight, I made my version with spaghetti squash instead of rice. I know, sounds weird and disgusting, right? But it actually turned out quite yummy. There's just something about the combination of spam, corn and kimchee - nothing else matters. ;)
And Jill, I guess you don't know rocketDOG and me well enough, huh?! We could NEVER stop eating or talking about FOOD!!! :D --MM

Kimchee fried rice is good! Reminds me of college yrs when a friend used to cook this for us all the time.
