The Jackie Byrd Special



Since I'm going out of town again next week, I posted 2 shots today. Otherwise I will never catch up. My friend, Super-Freak, taught me this simple pasta salad which she calls the "Jackie Byrd Special". Fusilli pasta with diced cucumbers, carrots, avocados, cherry tomatoes, shredded rotisserie/roast chicken tossed with a zesty vinaigrette. To make it a bit healthier, my version has whole wheat fusilli pasta and a homemade vinaigrette dressing. --MM

anything with avocados im game!! I bet it would be good with artichokes.
