Pasta!



Just wanted something easy to make for dinner so I grabbed whatever we had in the fridge and made some pasta. This turned out to be pretty tasty. Whole wheat spaghetti with eggplant, olives, tomatoes, mushrooms and apple chicken sausage seasoned with garlic, salt, fresh ground pepper, hot chili flakes, basil, and parsley and a sprinkling of reggiano parmigiano. --MM

You're right, I would like that. No sauce, just tomatoes? Gosh, I'm so hungry.

The tomatoes were canned tomatoes that I drained a little bit but they still created a bit of "sauce".

Wow, Jill, you gave up carbs for Lent?! Um, wait a minute...what did we eat when we were at Postrio's in Vegas?!?

MM, I didn't give up carbs for lent, I was practicing being a Jew for Passover, which started the week of holy week. I couldn't eat anything fried in oil, anything with flour and lots of yummy stuff. It made me think twice of being a Jew, but I managed to pull it off!
